Pickled beets are a staple in home pantries, but they can taste a little different every time. In this recipe, they are accompanied by anise, cumin, and fennel, whose aromas develop beautifully in the brine. The result is a delicious side dish with a distinct aroma and flavor that you'll love to return to.
Beetroot has a strong place in Czech cuisine and is a popular side dish to a variety of dishes when pickled. It goes well with roasted and grilled meat, cold dishes or just as a small snack. Home pickling also allows you to prepare a supply exactly to your taste and have it on hand at all times.
Pickled beetroot with anise, cumin and fennel
Pickled beetroot is a pleasant change from traditional canning thanks to its fragrant brine of anise, cumin and fennel. Prepare the brine the day before so that the aroma of the spices can develop beautifully.

- 1 batch you will need
- 8 kg of beetroot
- 1 l of vinegar
- 2 l of water
- 100 g of salt
- 450 g of granulated sugar
- 8 g of anise
- 12 g of cumin
- 12 g of fennel
- Boil the ingredients for the marinade in a pot and let them stand, covered with spices, until the next day, so that the flavors and aromas of the spices can fully release.
- Wash the beetroot and cook it in water with the skin on until soft. Cook it only until it is semi-soft so that it is easy to slice later and retains a nice texture in the brine. The cooking time depends on the size of the individual tubers.
- Let the cooked beets cool, peel them and cut them into rounds or cubes, depending on your taste.
- Arrange the chopped beets evenly in dry and well-washed jars.
- Pour the strained brine over the beets. Carefully wipe the rims of the jars to remove any dirt, and seal the jars with clean lids.
- Sterilize the filled jars for approximately 20 minutes at a temperature of 85°C.
- After sterilizing the jars, carefully turn the lids down and let them cool completely.
