Ham and cheese puff pastries for an appetizer

What type of puff pastry should I use to get crispy pastries that hold their shape well?

  • 1 unit puff pastry
  • 100g Saint-Morêt
  • 4 slices of cooked ham
Method · 10 min
  1. Roll out the puff pastry. Spread with cheese and place the hams on top to cover the entire pastry.
  2. Roll out the dough and place it in the freezer for 15 minutes to make it easier to cut. Preheat the oven to 180°C.
  3. Remove the dough from the freezer and slice it into pieces about 1 to 2 cm thick. Place them on parchment paper or a silicone baking mat and bake for 15-20 minutes until lightly golden. Enjoy warm or cold!

Choose a puff pastry made with all-butter, which is firmer and bakes more evenly. A thick pastry that is thoroughly chilled before baking will result in a crisper, more defined flaky texture and prevent shrinkage.

Can the puff pastries be prepared in advance and baked just before serving as an appetizer?

Yes, you can prepare them a few hours in advance, shape them, and then store them in the refrigerator on a covered baking sheet. Bake them at the last minute: the very cold dough rises better and stays crispier.
