1. Place the oil and chopped calabrese sausage in a pressure cooker and sauté well.

- 2 tablespoons of oil
- 150 g of Calabrese sausage
- 1 onion
- 3 cloves of garlic
- 1/2 red bell pepper
- 1 medium carrot
- 1/2 can of sweet corn (without the canning agent)
- 2 cups of rice
- 1/2 teaspoon of saffron
- 1/2 teaspoon of black pepper
- 2 bay leaves
- 1/2 teaspoon of salt
- 3 cups of warm water

- 200 grams of creamy ricotta cheese
- Fresh herbs to taste
- 200 g of mozzarella cheese

- Place the oil and chopped calabrese sausage in a pressure cooker and sauté well.
- Add the chopped onion and garlic and sauté again.
- Next, add all the remaining ingredients (except those for the finishing touches).
- Mix until everything is incorporated.
- Cover the pressure cooker.
- After the pressure cooker reaches pressure, let it cook for 3 minutes.
- Turn off the heat and let the pressure release naturally.
- Carefully remove the lid and add all the remaining ingredients, except for the potato sticks.
- Mix well so that the mozzarella melts from the heat of the rice.
- Transfer to a serving dish and finish by decorating with potato sticks on top to taste.
