A golden crust instead of a watery broth: a culinary trick has transformed everyday food

This dish balances between a rich soup and a main course.

Ingredients

Method
  1. Разогрейте Ð´ÑƒÑ Ð¾Ð²ÐºÑƒ до 220°C. На среднем огне в оливковом масле обжарьте красный лук в течение 10 минут, добавьте измельченный чеснок, орегано, копченую паприку и шафран, прогрейте одну минуту.

This dish balances between a rich soup and a main course. Its character is defined by the combination of dense, almost creamy chickpeas and baked chicken thighs. The flavor is deepened by smoked paprika and saffron, and the final touch of a tart, nutty sauce removes any excess heaviness, adding a piquant freshness.

The key here is roasting the ingredients instead of boiling them traditionally. Baking the chicken gives it a golden crust and concentrated flavor, rather than simply simmering it in broth. The soup's silky texture is achieved by mashing some of the cooked chickpeas with a fork right in the pan—this creates a natural thickening without the need for flour or cream.

An important detail: the critical stage is the transition from open to closed roasting. For the first 15 minutes, the meat is seared at a high temperature, creating a "sealed" layer, and for the next 45 minutes, the chicken simmers under foil in its own juices and wine, becoming as juicy as possible.
