Airfryer Chicken Hearts
Chicken hearts stewed with pickles and sour cream are a must-try for all offal lovers. As a rule, most cooks, even those with a great love for chicken hearts, use the same recipe: stew the hearts in sour cream with onions and carrots. No one argues: it's simple and delicious—with buckwheat or mashed potatoes.
- Chicken hearts
- Garlic
- Refined vegetable oil
- Soy sauce
- Apple cider vinegar 6%
- Caucasian Herbs Seasoning
- Salt
- Ground black pepper
- Prepare the offal for frying in the air fryer. Trim off any excess fat and remaining blood vessels from each heart. Rinse under running water and pat dry with paper towels. Transfer the hearts to a large container where they will marinate.
- Press the garlic through a garlic press. Combine with oil, soy sauce, and vinegar. Whisk. Add Caucasian herbs (or a blend of other herbs to your liking). Season with salt and pepper. Stir. Pour the marinade over the garlic hearts. Cover the container with a lid or plastic wrap. Refrigerate for an hour or more, if time allows.
- While the hearts are marinating, prepare the wooden skewers. Soak them in cold water and leave them there until ready to use, but for at least 40-50 minutes. This will prevent the skewers from burning while air frying. Once the hearts are thoroughly marinated and the skewers are soaked, pat them dry with paper towels and thread the hearts onto the skewers.
- Preheat the air fryer to 200°C. Place the skewers in a single layer on the bottom rack of the appliance, leaving at least 1 cm between each serving. Cook for 10 minutes. Open the air fryer, turn the skewers over, and cook for another 10 minutes. Serve with any sauce of your choice.
Chicken liver and hearts in sour cream are a healthy and filling dish, perfect for everyday family meals. They contain essential micronutrients such as zinc, magnesium, and iron, as well as vitamins A, B, and PP. When cooking, pay attention to the order of adding the ingredients—chicken hearts take longer to cook than livers, so they should be fried first. Cook the dish in a deep, heavy-bottomed frying pan, a heavy saucepan, or a large wok—stewed dishes are especially delicious in these types of cookware!
For some reason, chicken giblets in sour cream sauce aren't particularly popular here. Even though giblets are a complete meat product for very little money, with a rich flavor and a pleasant texture. If you have no reservations about hearts and "navels" (what a funny name, right?), try making this beef stroganoff-like dish. Even if you do have reservations, make it anyway; they might just disappear once you get the hang of it. A step-by-step recipe for chicken giblets is below.
