Çökertme Kebab

700 gr. piece of beef sirloin

Salt

1 teaspoon of powdered sugar

Black pepper

For the tomato sauce: Add olive oil to a small saucepan. Add the tomato paste and sauté. Add the tomatoes to the sautéed tomato paste and add granulated sugar to balance the acidity. Season with salt and pepper. Cook, stirring occasionally.

For the potatoes: Peel the potatoes and soak them in water. Cut the potatoes into matchstick shapes using a potato masher. NOTE: You can also use the coarse side of a grater. Then drain the water and pat them dry thoroughly with a towel. Heat sunflower oil in a large pan. Fry the potatoes. Transfer the fried potatoes to a plate lined with paper towels.

For the meat: Place your ribbed pan on the stove and heat it. Cut the meat into thin, long strips about finger width apart. Sprinkle with salt and cook in the heated pan.

For the yogurt: In a mixing bowl, combine the yogurt and crushed garlic.

To assemble: Spread the potatoes on the bottom of a serving plate. Place the yogurt on top, then the meat. Drizzle the yogurt and the prepared tomato sauce over the meat and serve.
