This soup is a decent, hearty, red pepper-based meal. The potato dumplings cooked in it make it so filling that it can easily be served as a main course with some bread on a cooler day.

Plain chicken breast is easiest to dress up with fresh herbs. The thyme and lemon give the meat a very fresh flavor, which goes great with the tart, green apple quinoa salad. A particularly light, protein-rich lunch that won't leave you feeling heavy in the afternoon.

Cauliflower is worth roasting in a baking dish, tossed with spices, because it will have a completely different taste than boiled. Tossed with fresh vegetables and a simple dressing, it makes an exciting side dish, but it also works as a meatless main course.

You can't get tired of cocoa cookies, but if you want to spice them up a bit, cardamom is worth adding! This spice goes perfectly with the filling, so it will go especially well with your afternoon coffee.
