Caribbean-style herring

Caribbean Herring is my own recipe for an extraordinary herring salad with pineapple, mango, or peaches, spicy chili, and tart lime juice. You'll love the flavor.

  • 200 g matjes herring fillets in oil - about 2-3 pieces
  • 150 g canned pineapple - about 3-4 rings
  • 1 small mango - about 200 g of pulp
  • a handful of fresh coriander
  • 2 shallots - about 40 g
  • 3 tablespoons of oil or your favorite olive oil
  • 2 tablespoons freshly squeezed lime juice
  • 1/3 teaspoon of coriander seeds - you can use allspice
  • a large pinch of chili flakes - dried jalapeno can be used

Caribbean-style herring

For this oriental salad, I used Matjas herring fillets in oil. Three small herring fillets weighed a total of 200 grams. Remove the fillets from the oil and cut them into strips about 1 cm thick.

Tip: If you want the salad to have a more intense flavor, you can add up to twice as many herring fillets. You can also chop them much smaller.

Cut about 150 grams (3-4 slices) of canned pineapple into bite-sized pieces. Peel a small, ripe mango, remove the pit, and dice the flesh.

Tip: You can replace some or all of the mango (if you don't have fresh fruit) with a few tablespoons of mango pulp, or you can use fresh papaya or canned peaches. This time, I used both mango and canned peaches (half and half).

Place the sliced ​​herring fillets and fruit in a large bowl. Add the peeled and thinly sliced ​​scallions and a handful of fresh cilantro (lightly torn between your hands). Drizzle with three tablespoons of vegetable oil or your favorite olive oil and two tablespoons of freshly squeezed lime juice. Add a generous pinch of chili flakes (I used Gochugaru chili flakes) and 1/3 teaspoon of coriander seeds.

Tips: The shallots can be swapped for sweet onions. The fresh cilantro can be omitted or, as a last resort, replaced with parsley. The chili flakes can be swapped for chopped fresh chili peppers (test for heat before adding) or dried jalapeños. The coriander seeds can be replaced with 2-3 lightly crushed allspice berries.

Mix all the ingredients for the Caribbean-Style Herring Salad thoroughly. Taste the Caribbean-Style Herring and adjust the seasoning to your liking, if necessary.

Caribbean herring salad can be served immediately or chilled in the refrigerator. Store it in a covered glass container in the refrigerator for up to three days. If refrigerating for more than two days, toss the salad ingredients again before serving.
