Delicious Recipes: Cizleme Recipe
A staple of homemade breakfasts and tea time, cızleme (a type of fried dough pastry) is a star of the table thanks to its easy preparation and light texture.

- 2 cups of flour
- 1 glass of warm milk
- 1 tablespoon of powdered sugar (level)
- 1/2 cup lukewarm water
- 1 packet of fresh yeast (42 g)
- 1 pinch of salt
- You can enhance the flavor of the dough by adding a pinch of cinnamon or vanilla.
- Brushing it with melted butter or olive oil when serving enhances the flavor.
- If you like, you can serve the cooked flatbreads with finely chopped herbs, cheese, or jam.

- 1. For the Cızleme dough, first mix warm milk, sugar, and yeast in a bowl, cover, and let it sit for 5-10 minutes to activate the yeast.
- 2. Once the yeast has risen and started to foam, sift the flour into the mixture; you can also add the salt at this stage.
- 3. While mixing the dough with a mixer or whisk, add lukewarm water gradually according to the desired consistency, continuing until you obtain a homogeneous dough with a consistency similar to boza (a fermented drink).
- 4. Once the dough is ready, wrap it in a clean kitchen towel and let it rise a second time in a warm place.
- 5. Once the batter is bubbly and frothy, heat a non-stick crepe pan and pour in some batter using a ladle.
- 6. Cook one side only; the top should remain slightly bubbly and white.
- 7. When transferring the cooked flatbreads to a serving plate, lightly brush them with butter.
- 8. Repeat the same process until all the dough is used up.
- 9. Cızleme can be eaten with powdered sugar, honey, molasses, or white cheese; you can also serve it with a hot chicken stew if you wish.
