Recipes with ground beef for when you don't know what to make

Ground beef is one of the most versatile proteins in the kitchen. It cooks quickly, pairs well with almost any ingredient, and often comes to the rescue when inspiration is lacking.

Crispy toast with seasoned meat

To make some quick tostadas, you can sauté 300g of ground beef with half a chopped onion, a clove of garlic, and half a jalapeño pepper. Once it's browned, add half a cup of refried beans and a quarter cup of water to combine everything.

Just let it thicken slightly, season with salt, and spread the mixture on 6 toasts. You can top it with some lettuce, sour cream, and salsa, depending on what you have on hand.

Creamy pasta with ground beef

If you're looking for something more comforting, cook 200g of pasta (any kind you have) and while it's cooking, brown 250g of ground meat with a clove of garlic and a chopped tomato.

Once cooked, add half a cup of cream or evaporated milk and a quarter cup of grated cheese. Stir in the well-drained pasta and let it all simmer for a couple of minutes to achieve a creamy consistency and flavor.

Meat patties with oats

To make pancakes that go a long way, mix 300g of ground meat with one egg, a quarter cup of raw oats, two tablespoons of chopped onion and one teaspoon of Worcestershire sauce.

With this mixture, you can make 6 to 8 small pancakes and brown them in a pan with very little oil. They'll be juicy and go well with rice, salad, or steamed vegetables.

Potatoes stuffed with meat

If you have potatoes, you can make a complete meal. Just cook two large potatoes until soft. Separately, sauté 200g of ground beef with a tablespoon of butter, a quarter of a chopped onion, and half a diced bell pepper.

When the potatoes are ready, open them, scoop out some of the flesh, and mix it with the meat. Refill them and, if you have some, add a little cheese on top before broiling.

Meat quesadillas with vegetables

For more substantial quesadillas, sauté 200g of ground beef with half a grated carrot and a finely chopped squash. Simply cook them with a little salt until the vegetables soften. Use this mixture to fill 4 to 6 corn or flour tortillas and toast them on a griddle until well sealed.

Hearty soup with ground meat

If you want something warm and comforting, brown 200g of meat with a clove of garlic and a quarter of an onion. Add 1 liter of stock or water with a teaspoon of bouillon powder, as well as a chopped tomato, a diced carrot, a small potato, and a third of a cup of corn kernels. Let it simmer for about 15 minutes, until the vegetables are soft and the soup has thickened slightly.

One-pot style rice with ground beef

A very practical dish can be made by sautéing 250g of ground meat with a quarter of a chopped onion and a small tomato. Once cooked through, add a cup of uncooked rice and stir to lightly sauté it.

Add two cups of water, a pinch of salt, and, if you have them, a handful of peas. Cook over low heat, covered, until the rice is fluffy and the liquid has been absorbed.

With these recipes, ground meat becomes a useful and versatile ingredient once again, solving your meal dilemma without repeating the same old thing.
