First, start heating the oil and, with the help of a thermometer, reach.

Meanwhile, take the scottadito and cover the bones with tin foil.

After that, pass them first in the egg and then in the previously salted breadcrumbs, to form a nice crust.

Once the oil has reached the temperature, add the scottadito one at a time so as to keep the bone out of the oil.

Wait until golden brown (about 5/6 minutes) and place on a plate with absorbent paper to absorb the excess oil.

Proceed with all the pieces of scottadito and once they are all ready, plate them however you like, they will make a great impression either way.
