In a saucepan, heat the milk until it almost boils, remove from the heat, add the oil, stir and set aside.
Meanwhile, in a bowl, whisk the eggs with the sugar, the grated zest of a lemon and the vanilla until they become fluffy and frothy, add the well-sieved flour and baking powder.
At this point, add the milk and oil mixture and mix until the mixture is smooth and homogeneous.
Line a pan with wet and wrung out baking paper.
Pour the mixture into the mold and bake in a preheated oven at 170°C for 35/40 minutes.
Remove from the oven, let cool and sprinkle with icing sugar.
