Recipe for baked potato dumplings, submitted by Renata

1. Peel the potatoes, cook them with salt, drain well, and mash them with a fork or pass them through a potato ricer. Let them cool before proceeding with the rest of the recipe, or the dough will become too sticky and won't come off your hands.

Ingredients · Servings 20
  • 500 g of cooked and mashed potato
  • 1 this
  • 1 1/2 cups sifted wheat flour (you may need a little more)
  • 25g grated cheese (optional)
  • 1/2 teaspoon of salt
  • 1/4 cup of parsley (optional)
  • 1/3 of a Calabrese sausage
  • oil
  • 1 egg for browning (optional)
Method · 1 h 30 min
  1. Peel the potatoes, cook them with salt, drain well, and mash them with a fork or pass them through a potato ricer. Let them cool before proceeding with the rest of the recipe, or the dough will become too sticky and won't come off your hands.
  2. While waiting for it to cool, preheat the oven and grease a baking sheet (no need to flour it).
  3. Once the mashed potatoes have cooled, add the egg, grated cheese, salt, and parsley. Mix well. Add the finely diced calabrese sausage and mix again.
  4. Add the flour gradually, mixing with your hands. The dough may be slightly sticky, but it should come away from your hands so you can shape the dumplings.
  5. Rub oil on your hands and shape the dough into small balls. They can be balls, rolls, it doesn't matter. Brush the tops with egg yolk to make them golden brown.
  6. Bake in a medium/high oven for approximately 40 minutes (depending on the oven). If desired, flip the muffins halfway through the baking time. They are ready when golden brown.
