This homemade and healthy nugget recipe is ideal for avoiding ultra-processed foods with children
Chicken nuggets are often a practical option for children's snacks or dinner, but the industrially produced versions fall into the ultra-processed food category and can have a long list of ingredients.
- 1 chicken breast fillet, cubed;
- 2 tablespoons of grated Parmesan cheese;
- 1 boiled potato;
- 1/2 chopped onion;
- 2 tablespoons of grated carrot;
- 1 cup of corn flakes;
- 1 this;
- Salt and paprika to taste.
- This combination forms both the dough and the crispy coating. The corn flakes are mainly used for breading.
The base of the nugget is made with chicken and simple ingredients.
The dough starts with raw chicken breast cut into cubes. It is processed together with cooked potato, onion, carrot, Parmesan cheese, salt, and paprika until it forms a smooth, easily moldable mixture.
The potato helps to give structure and softness, while the carrot adds flavor and a little moisture to the dough.
Corn flakes are the secret to the crunchiness.
Before preparing the dough, the corn flakes should be quickly ground in a food processor or blender. Ideally, they shouldn't be completely turned into fine flour.
Leaving small pieces helps create a more irregular and crispy crust when the nuggets go into the air fryer.
The dough should be firm enough to be shaped.
After removing the crushed flakes, place the chicken, potato, Parmesan cheese, onion, carrot, and seasonings in the same blender. Blend for a few minutes until the chicken is finely chopped and the mixture has a uniform consistency.
Next, shape the mixture into small discs or shapes similar to traditional nuggets. Making them all the same size helps ensure even cooking.
The breading is made with just egg and corn flakes.
Once the nuggets are shaped, dip each one first in the beaten egg and then in the crushed cornflakes.
You can also use breadcrumbs or panko instead of flakes, but the corn coating makes the result especially crispy without needing to fry in oil.
An air fryer can complete the recipe in about 20 minutes.
After preheating the air fryer, the nuggets should bake at 200°C for approximately 20 minutes. Depending on the size of the nuggets and the power of the appliance, it may be necessary to adjust the time by a few minutes more or less.
Since the mixture contains raw chicken, the center needs to be fully cooked before serving. Opening a larger piece to check the doneness is a simple way to prevent the inside from remaining raw.
The recipe allows for the inclusion of other vegetables.
Carrots are not mandatory. The recipe itself suggests substituting or supplementing them with vegetables such as broccoli or cauliflower, provided they are used in quantities that do not make the dough excessively moist.
This flexibility makes it easy to adapt the nugget to what you already have at home and vary the flavor without completely changing the preparation.
Preparing it at home gives you more control over the ingredients.
Making homemade nuggets doesn't automatically turn any meal into a "perfect" one, but it allows you to know exactly what ingredients went into the preparation and adjust the salt, spices, and vegetables accordingly.
The main advantage is reducing reliance on ultra-processed versions without sacrificing a format that usually appeals to children. With few ingredients, simple breading, and about 20 minutes in the air fryer, the recipe manages to combine practicality and a more straightforward composition for everyday life.
