A fragrant shell, a soft and fragrant filling, and all the sweetness of fruit: apple and persimmon strudel is the ideal recipe to transform waking up into a truly delicious moment, especially when you want to bring something simple yet different to the table.

Strudel is one of those desserts that captivates you even while it's baking, when the scent of fruit and cinnamon begins to waft through the kitchen. In this version, the classic apples are complemented by a particularly creamy and naturally sweet ingredient: ripe persimmon. The result is an easy-to-make apple and persimmon strudel, featuring a soft filling that contrasts beautifully with the crispy puff pastry crust. A particularly inviting option for breakfast, but also perfect for a homemade snack.

The preparation begins with a ready-made rectangular puff pastry roll, a choice that significantly reduces preparation time. For the filling, all you need is a Golden Delicious apple, a ripe persimmon, raisins, and cinnamon. Honey and brown sugar contribute to an even more delicious and golden crust. The strength of this dessert lies in the combination of these two fruits: the Golden Delicious apple and persimmon create a sweet, juicy, and enveloping filling, while the cinnamon adds that aromatic note that immediately evokes the aroma of freshly baked pastries. Making it in the morning is a wonderful way to wake up, but the strudel can of course be made ahead of time and enjoyed later.

Ingredients for making apple and persimmon strudel

  • 1 roll of rectangular puff pastry
  • 1 Golden Delicious apple
  • 1 ripe persimmon
  • about 1 tablespoon of raisins
  • Cinnamon to taste

Step-by-step recipe for a fragrant and delicious strudel

  • First, remove the puff pastry from the refrigerator and let it rest for about 5 minutes before unrolling it. This brief step makes it easier to handle and prevents it from breaking while unrolling.
  • Peel the Golden Delicious apple, remove the core, and cut the pulp into small pieces. Peel the ripe persimmon and chop it into small pieces. It's important to choose a very ripe persimmon, as its soft texture will help make the filling particularly creamy.
  • Transfer the apple and persimmon to a bowl, then add about a tablespoon of raisins and a sprinkle of cinnamon. Stir gently until the ingredients are evenly distributed. The strudel filling should be soft and fragrant, with the apple still recognizable amidst the creamier persimmon pulp.
  • Unroll the rectangular puff pastry, keeping it on its baking paper, and gently prick the base with the prongs of a fork.
  • Spread the apple, persimmon, raisin, and cinnamon mixture on one half of the pastry, leaving a small margin along the edges. Avoid spreading the filling all the way to the edge, as this will make it easier to seal the strudel.
  • Fold the remaining half of the dough over the filling and carefully seal the edges, pressing lightly with your fingers. This will help the filling stay inside during baking.
  • Brush the surface with a drizzle of wildflower honey. Then make a few small slits on the top of the strudel: in addition to being decorative, these will allow the steam produced by the fruit to escape during baking.
  • Dust with brown sugar and bake in a preheated oven at 200°C (400°F). Bake for about 30 minutes, checking on it at the end.
  • Once the puff pastry has turned a lovely golden amber color, remove the strudel from the oven and let it cool. The brief resting time will also help the filling firm up before cutting.
  • Before serving, dust generously with powdered sugar and, to taste, a final light dusting of cinnamon. Then, cut the strudel into slices and serve while still slightly warm or at room temperature.

The result is a simple yet surprising homemade dessert, where the fragrant pastry meets a tender, fruit-rich center. Apple adds texture, persimmon adds creaminess and sweetness, while raisins and cinnamon round out the filling with intense aromas. Apple and persimmon strudel is a perfect little treat to start the day: a slice for breakfast, perhaps still warm, is enough to make waking up decidedly more delicious.
