Grandma's pancake recipe – the secret behind the classic

The difference to many other pancake recipes lies in the egg whites: they are beaten separately until stiff and only then carefully folded into the egg yolk-milk-flour mixture. This gives the batter a light, almost foamy texture, which ensures particularly tender, fluffy pancakes when cooked. It's best to pour the finished batter into a jug – this makes it much easier to measure out into the pan later.
The pan should be evenly hot before adding the first portion of butter. A small amount of batter is sufficient – swirling the pan will spread it to the edges. Each side needs about a minute to become golden brown. Add a little more butter between each pancake.
