Fig Strudel: A Summer Recipe with Fresh Figs, Biscuits, and Dried Fruit

Fig strudel is a summery twist on the classic apple strudel, a signature dessert of Trentino-Alto Adige.

We used a mix of pine nuts, almonds, and walnuts, but you can use any other dried fruit you like, or you can make the casing with classic puff pastry.

For an even more authentic result, we suggest choosing organic figs of your favorite variety, so you can safely consume them with their peel intact.

How to make fig strudel

To prepare the fig strudel, first mix the flours in a bowl, then add a pinch of salt and pour the beaten egg in the center 1.

Gradually pour in the water and mix with a fork to incorporate the liquids 3, then continue kneading with your hands until you obtain a smooth and homogeneous dough.

Form a ball and place it in a clean bowl 4.

Cover with a cotton cloth 5 and let it rest at room temperature for half an hour.

Meanwhile, prepare the filling: cut the figs into 6 pieces.

Place them in a container and sweeten with brown sugar 7.

Spice with ground cinnamon, then add the juice and grated zest of the lemon 8.

Finish with a handful of chopped dried fruit 9.

Once the resting time has elapsed, roll out the dough on a floured work surface until you obtain a thin rectangle about 5 mm thick 11.

Then sprinkle the rectangle of dough with the crumbled dry biscuits 13.

Spread the fig mixture 14 in the center, leaving a few cm from the edges.

Roll the dough over the filling starting from the long side until it forms a cylinder 16.

Seal the ends and make 3 incisions on the surface with the blade of a knife 17.

Then transfer the strudel onto a baking tray lined with baking paper 18 and bake everything in a hot oven at 190°C for approximately 25 minutes.

Then take the strudel out of the oven 19 and let it cool.

Dust the cake with a light layer of icing sugar 20.

Arrange the fig strudel on a serving plate, cut it into 21 slices and serve.

Tips and storage

If you like, you can finish the dessert with a dusting of powdered sugar, as in the version proposed here, or you can serve it as a snack or after a meal with a scoop of vanilla ice cream or a dollop of whipped cream.

If you like, you can enrich the filling with dark chocolate flakes or raisins soaked in rum for a pleasantly alcoholic note. When fresh figs are not in season, you can replace them with dried ones.

Fig strudel can be stored in the refrigerator, in an airtight container, for up to 2 days. When ready to serve, we recommend briefly reheating it in the oven to restore its freshly baked freshness.
