Butternut squash soup in the Thermomix

With this butternut squash soup made in the Thermomix, there's no peeling chore! Indeed, unlike pumpkin, you don't need to peel butternut squash in a creamy soup recipe.

Ingredients · Servings 4
  • Yellow onion - 1
  • Shallot - 1
  • Pumpkin - 700 grams
  • Smoked bacon bits (optional) - 125 grams
  • Olive oil - 1 tablespoon
  • Water - 500 grams
  • Vegetable stock cube - 1
  • Thick fresh cream - 40 grams
  • Salt - 1 pinch
  • Pepper - 1 pinch
Method · 35 min
  1. Place 1 yellow onion, cut in half, in the Thermomix bowl.
  2. Add 1 shallot to the Thermomix bowl.
  3. Add the lid with the measuring cup
  4. Mix for 5 seconds/speed 5.
  5. Scrape the sides of the bowl with the spatula.
  6. Add 700 grams of washed, deseeded and diced pumpkin to the Thermomix bowl.
  7. Add 125 grams of smoked bacon (optional) to the Thermomix bowl.
  8. Add 1 tablespoon of olive oil to the Thermomix bowl.
  9. Add the lid with the measuring cup
  10. Sauté for 8 min/120°C/speed 1.
  11. Add 500 grams of water to the Thermomix bowl.
  12. Add 1 vegetable stock cube to the Thermomix bowl.
  13. Add the lid with the measuring cup
  14. Cook for 20 minutes at 100°C/speed 2.
  15. Add 40 grams of thick cream to the Thermomix bowl.
  16. Add 1 pinch of salt (adjust to taste) to the Thermomix bowl.
  17. Add 1 pinch of pepper (adjust according to taste) to the Thermomix bowl.
  18. Add the lid with the measuring cup
  19. Mix for 1 min/speed 5. Gradually increase the speed up to 9.
  20. Serve immediately.

Butternut squash soup is a true delight, bursting with flavor and creaminess. Butternut squash is indeed ideal for creamy soup recipes because it is much less watery than pumpkins, and also imparts a delicate chestnut flavor.

A large bowl for a comforting lunch or dinner, a small plate as a starter… It’s guaranteed that young and old will love it .

Place 1 yellow onion, cut in half, and 1 shallot in the Thermomix. Mix for 5 seconds / speed 5. Then scrape down the sides of the bowl with the spatula.

Add 700 grams of washed, deseeded and diced butternut squash, 125 grams of smoked bacon (optional) and 1 tablespoon of olive oil to the Thermomix. Sauté for 8 minutes / 120°C / speed 1.

Add 500 grams of water and 1 vegetable stock cube to the Thermomix. Cook for 20 minutes / 100°C / speed 2.

Add 40 grams of heavy cream, a pinch of salt (adjust to taste), and a pinch of pepper (adjust to taste) to the Thermomix. Mix for 1 minute at speed 5, then gradually increase the speed to 9.
