- 800g Pumpkin
- 200g Potatoes
- 1 Onion
- 1 clove of garlic
- 600 g Water
- 1 vegetable stock cube
- 10 cl Liquid cream
- 1 Tbsp Olive oil
- 1 good pinch of nutmeg

Method · 35 min
- Peel the onion and quarter it. Peel the garlic clove. Place the onion and garlic in the Thermomix bowl and chop for 5 seconds on speed 5. Scrape down the sides of the bowl with a spatula. Add the olive oil and sauté for 3 minutes at 120°C on speed 1, without the measuring cup. This step helps to enhance the flavor of the soup.
- Wash the pumpkin thoroughly. Cut it in half and remove the seeds and fibers. Dice the flesh, skin and all, into small pieces. Peel the potatoes and cut them into cubes as well. Add everything to the bowl. Pour in the water and add the stock cube. Season lightly with salt and pepper. Cook for 22 minutes at 100°C, speed 1.
- Check that the butternut squash and potato pieces are tender. Add the cream and nutmeg. Replace the measuring cup and gradually blend for 1 minute, increasing the speed from 5 to 10. Adjust the consistency with a little hot water if you prefer a thinner soup. Taste and adjust the seasoning.
- Pour the soup into bowls and serve immediately. Add a drizzle of cream, a few pumpkin seeds, or some chopped hazelnuts, as desired. If preparing the soup in advance, let it cool and then refrigerate it. Reheat it directly in a Thermomix at a low temperature before serving.
