Milk bread made in a Thermomix {The best!}
Milk bread is a direct cousin of Viennese bread, and they share the same origin. Viennese bread, however, is larger and contains slightly less flour. Its texture and flavor are quite similar to those of brioche, but brioche doesn't necessarily contain milk and is richer in eggs and butter.
- Semi-skimmed milk - 220 grams
- Fresh baker's yeast - 20 grams
- Butter - 100 grams
- Powdered sugar - 80 grams
- Eggs - 2
- Flour - 500 grams
- Salt - 2 pinches
- Put 220 grams of semi-skimmed milk into the Thermomix bowl.
- Add 20 grams of fresh baker's yeast to the Thermomix bowl.
- Add the lid with the measuring cup
- Cook for 7 minutes/37°C/speed 2.
- Add 100 grams of butter cut into pieces to the Thermomix bowl.
- Add 80 grams of caster sugar to the Thermomix bowl.
- Add 2 eggs to the Thermomix bowl.
- Add the lid with the measuring cup
- Cook for 4 minutes/37°C/speed 2.
- Add 500 grams of flour to the Thermomix bowl.
- Add 2 pinches of salt to the Thermomix bowl.
- Add the lid with the measuring cup
- Mix for 5 minutes/kneading speed.
- Transfer to a bowl covered with plastic wrap and leave for 1 hour 30 minutes.
- Form 12 small balls and give them an oval shape.
- Place your balls on a baking sheet lined with baking paper and leave them in a warm place.
- Reserve for 1 hour 30 minutes.
- Preheat the oven to 190°C.
- Brush your loaves with a little milk or egg yolk to color them when baking.
- Place in the oven for 15 minutes at 190°C.
Milk bread is generally given an oval or round shape and has been prepared since at least 1654, when it was described as the best bread in the Paris region!

Place 220 grams of semi-skimmed milk and 20 grams of fresh baker's yeast in the Thermomix. Heat for 7 minutes / 37°C / speed 2.
Add 100 grams of butter cut into pieces, 80 grams of caster sugar and 2 eggs to the Thermomix. Heat for 4 min / 37°C / speed 2.
Add 500 grams of flour and 2 pinches of salt to the Thermomix. Knead for 5 minutes / kneading mode.
Transfer the contents of the Thermomix into a bowl covered with plastic film and then leave for 1 hour 30 minutes.
