Pumpkin cream with Thermomix (very easy recipe)

Pumpkin soup is one of the most popular dishes during the autumn and winter months, and for good reason: it's a very simple, quick, and economical recipe made with seasonal ingredients. It's also a light and healthy dish, a great option for dinner or as a starter for lunch.

Pumpkin is a very versatile food and can be roasted in the oven, sautéed, boiled, used in the preparation of sauces and jams and even to make pumpkin bread.

Another very common use is in the preparation of desserts with pumpkin, such as the famous pumpkin pie, pumpkin sponge cake, marquesitas or pumpkin flan.

This time we'll show you how to make pumpkin soup with a Thermomix, a very easy and quick recipe that's ready in 30 minutes. If you have a Thermomix or are thinking of buying one, don't miss a thing!

Ingredients for making pumpkin cream with Thermomix

  • 500g of pumpkin (peeled and seeded)
  • 2 leeks
  • 3 carrots
  • 1 potato
  • 1/2 liter of water or vegetable broth
  • 50g of olive oil
  • 1 teaspoon of salt
  • Ground pepper to taste

For decoration (optional):

  • Cream or cream
  • Chopped parsley
  • Sunflower or pumpkin seeds.

Prepare the ingredients:

If you don't have frozen pumpkin and are using a freshly bought one, peel it, remove the seeds, and cut it into cubes about 4 centimeters in size.

Wash the leeks and remove the green part (you can use it to make broth). Slice the white part.

Peel the carrots and slice them as well.

Peel the potato and cut it into pieces about 4 cm in size.

Cooking in a Thermomix:

1. Put the carrot and leek in the Thermomix bowl. Chop for 4 seconds at speed 4.

2. Add the olive oil and program 5 minutes, Varoma, speed 2.

3. Add the pumpkin and potato and program 10 minutes, 100ºC, speed 2.

4. Add 500 ml of water or vegetable stock (it should cover the vegetables) and add salt and pepper to taste. Program 15 minutes, 100ºC, speed 1.

5. Finally, blend the pumpkin cream for 1 minute at progressive speed 5-7-9.

Check the salt level and serve the pumpkin cream.

We decorated the pumpkin cream by adding a little cream, chopped parsley and pumpkin seeds (use up the pumpkin seeds), but you can also decorate it with paprika and other spices, croutons, seeds, nuts...

Tips for making perfect pumpkin soup with Thermomix

1. Type of pumpkin

Although there are many types of pumpkin, it is advisable to use a variety that is recommended for preparing creams and purees, such as butternut squash or Potimarron squash.

2. Texture of the pumpkin cream

If once the recipe is made you prefer a more liquid texture, you can add a little more water or broth to the Thermomix bowl and cook it for 2 more minutes at 100ºC, speed 1.

3. Creamier

If you want it to be even creamier, you can add 100g of cream, milk or cream cheese to the Thermomix bowl once it's blended and continue blending a little longer.

4. Preserve the pumpkin cream

This cream is usually served hot, although it can also be served warm or cold, according to each person's taste.

If you've made a large batch and want to store it, you can keep it in an airtight container for 2-3 days. You can also freeze this cream.

Other versions of pumpkin cream with Thermomix

This pumpkin cream recipe is the most basic and simple, but using it as a reference, you can prepare different versions of this dish.

You can substitute the carrot with zucchini and the leeks with the same amount of onion.

The potato is responsible for giving consistency to the cream, so you can substitute it with an apple, which has the same function, or with a sweet potato, as in this recipe for pumpkin and sweet potato cream.

Another way to make variations of this recipe is by adding different spices in step 2 (along with the oil), such as paprika, curry, or turmeric.
