Busy woman's pear and chocolate cake made with Thermomix

The busy woman's cake is a Tupperware recipe from the 70s/80s, here it is adapted for the Thermomix!

Ingredients · Servings 8
  • T45 flour - 125 grams
  • Powdered sugar - 80 grams
  • Baking powder - 2 teaspoons
  • Eggs - 3
  • Vanilla extract - 1 teaspoon
  • Olive oil - 100 grams
  • Pears - 3
  • Dark chocolate chips - 60 grams
  • Apricot jam - 1 tablespoon
Method · 47 min
  1. Put 125 grams of t45 flour into the Thermomix bowl.
  2. Add 80 grams of caster sugar to the Thermomix bowl.
  3. Add 2 teaspoons of baking powder to the Thermomix bowl.
  4. Add the lid with the measuring cup
  5. Mix for 50 seconds/speed 3.
  6. Add 3 eggs to the Thermomix bowl.
  7. Add 1 teaspoon of vanilla extract (adjust according to taste) to the Thermomix bowl.
  8. Add the lid with the measuring cup
  9. Mix for 1 min/speed 3.
  10. Scrape the sides of the bowl with the spatula.
  11. Add 100 grams of olive oil to the Thermomix bowl.
  12. Add the lid with the measuring cup
  13. Mix for 1 min/speed 3.
  14. Scrape the sides of the bowl with the spatula.
  15. Preheat the oven to 180°C.
  16. Place 3 peeled and sliced ​​pears on your work surface in the Thermomix bowl.
  17. Add the pears to the Thermomix bowl.
  18. Add 60 grams of dark chocolate chips to the Thermomix bowl.
  19. Add the lid with the measuring cup
  20. Mix for 30 seconds/speed 2.
  21. Butter a cake tin (Ø 24 cm).
  22. To make removing the cake easier, place a sheet of baking paper in the bottom.
  23. Pour the batter into the mold.
  24. Place in the oven for 30 minutes at 180°C. For a conventional oven, adjust the cooking time by + or - 5 minutes depending on your oven.
  25. Wait a few minutes and unmold the cake onto a wire rack.
  26. Place 1 tablespoon of apricot jam to brush onto the cake with a pastry brush in the Thermomix bowl.

This recipe does not require much preparation; the base of this simple cake allows for a variety of toppings according to your preferences.

A cake that tastes even better when topped with fruit, in this case pears.

As for fresh fruit, the combination of apples, cinnamon and raisins is also excellent.

You can also arrange pineapple slices on the pastry before baking, and drizzle with pineapple juice after baking.

Finally, olive oil can be replaced by another oil.

Place 125 grams of T45 flour, 80 grams of caster sugar and 2 teaspoons of baking powder in the Thermomix. Mix for 50 seconds / speed 3.

Add 3 eggs and 1 teaspoon of vanilla extract (adjust to taste) to the Thermomix. Mix for 1 minute at speed 3. Then scrape down the sides of the bowl with a spatula.

Add 100 grams of olive oil to the Thermomix and mix for 1 minute / speed 3. Then scrape down the sides of the bowl with the spatula.

Place 3 peeled and sliced ​​pears on your work surface.

Add 60 grams of dark chocolate chips to the Thermomix and mix for 30 seconds / speed 2.

Spread 1 tablespoon of apricot jam over the cake using a pastry brush.

Perfect for an afternoon snack with our little coffee… Two ripe and juicy Conference pears were dreaming of ending up in a cake, and I wasn't about to deprive them of the pleasure of browning in the oven light!!!! Do the pears suffer? Who knows??? Well, I'm tackling my cake for the busy woman… And why not for the busy man, for that matter??? Although no, he might be in a hurry to devour it without leaving us a crumb!!! Some of them are capable of that, at least!!! So, 2 pears so ripe that I couldn't find them in the cake… 100g of flour and 25g of almond flour, 40g white sugar and 40g brown sugar, 2 teaspoons of bitter almond extract instead of vanilla extract, milk chocolate chips. I prepare all this, I take my time, I put it in the oven, I start to tidy up and what do I see? My bottle of olive oil… And there was light… I forgot to put it in the batter… I rush into the oven, come back out with the pan without a second thought, pour everything back into the bowl, add the oil, 40 seconds at speed 4 (that's probably where my pears disappeared!), pour it back into the pan, back into the oven… and cross my fingers… When it comes out of the oven, well, it looks very nice… I brush it with the pear and ginger jam… We taste it, well, it's very good… A little dense, almost like a flan… I may have just invented a recipe, the recipe for "Pear and Olive Oil Flan, Here It Is," which may well go down in history… And there you have it… What a story!!!
