- Wash the lemons thoroughly under cold running water to remove any impurities from the peel. Dry them with a clean cloth, then roll them on the work surface for a few seconds, pressing lightly with the palm of your hand to help release their juice. Cut them in half and remove any visible seeds as you go.
- Squeeze the lemon halves over a large pitcher using a citrus juicer, or simply with your hands if you prefer. Be careful to extract as much juice as possible without crushing the white pith under the peel, which could add bitterness. If necessary, you can quickly strain the juice through a small sieve to catch any stray seeds.
- Pour the granulated sugar into the pitcher containing the lemon juice, then gradually add the cold water. Stir thoroughly with a large spoon until the sugar is completely dissolved.
