Sausage with apple and pear compote for Thermomix®
potatoes (in wedges)

- 800 g potato
- 1.25 tsp salt
- 80 g neutral oil
- 1 red chili pepper
- 2 shallots
- 20 g ginger
- 1 tbsp lemon juice
- 3 tablespoons apple cider vinegar
- 20 g sugar
- 200g apple
- 200 g pear
- 4 Bratwurst
Method · 20 min
- Preheat oven to 220°C. Line a baking tray with parchment paper.
- Mix the potatoes with 1 teaspoon of salt and 20 g of oil in a bowl. Spread them on the prepared baking sheet and bake on the middle rack for 40 minutes at 220°C (425°F). Continue with the recipe during this time.
- Add chili, shallots and ginger to the mixing bowl, chop for 5 seconds/speed 5 and push down with the spatula.
- Add 20g of oil and steam for 5 minutes/Varoma/level 1 without the measuring cup.
- Add lemon juice, vinegar, 1/4 tsp salt, sugar, apples, and pears. Place the simmering basket on the mixing bowl lid as a splash guard instead of the measuring cup and cook for 13 minutes at 100°C on reverse speed 1. During this time, heat 40 g of oil in a pan and fry the sausages for 8–10 minutes until golden brown.
- Season the apple and pear compote to taste and transfer it to a serving dish. Remove the potato wedges from the oven, arrange them with the sausages and compote, and serve.
