Baked Chicken Pate Spread
Oven-baked chicken pâté is a magnificent dish, worthy of both everyday and festive meals. In our country, such appetizers are rarely prepared, but in France, they are adored, and in a variety of interpretations: with pork, rabbit, and duck. What to do with such a pâté?
- Baked chicken
- Chicken giblets
- Onions
- Garlic
- Butter
- Refined vegetable oil
- Granulated sugar
- Ground sweet paprika
- Smoked ground paprika
- Salt
- Ground black pepper
- If using giblets, boil them in boiling water until tender and chop into bite-size pieces. Chop or shred the chicken meat. Soften the butter.
- Peel the onion and garlic, chop them, and fry them in vegetable oil with salt and sugar over high heat until lightly golden, 5–6 minutes. Add the paprika and pepper, stir, and remove from heat.
- Puree the onion in a food processor or blender. With the motor running, gradually add the chicken, giblets, and butter, alternating between each. The smoothness of the pâté is entirely up to you. You can make it smooth or leave it chunky.
- Let the pâté sit in the refrigerator for 2–4 hours. Serve with toasted bread.
