Waffles

Waffles are always a random project for me. They are a great way to use up a dollop of whipped cream, custard or the last of your yogurt or ice cream. Here I give you a basic recipe, but the ingredients can be substituted depending on what you have in the fridge.

Ingredients · Servings 12
  • 3 eggs
  • 1 pinch of salt
  • 60g sugar
  • 6 dl h-melk
  • 1.5 dl water
  • 400 g wheat flour
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla sugar
  • 1 teaspoon cardamom
  • 100g butter
Method · 45 min
  1. Whisk together the eggs, salt and sugar until fluffy, but not quite stiff. Mix in the milk with the egg mixture.
  2. Mix together the flour and baking powder and add the dry ingredients to the wet ingredients little by little until you have a lump-free batter.
  3. Finally, stir in the cooled butter. Season with extra sugar or cardamom if desired. Let the mixture rise for about 30 minutes.
  4. Then fry the waffles until golden in a waffle iron and serve with sour cream and jam.
