Easy yogurt and orange cake

This easy yogurt and orange cake is, above all, very easy. Plus, you can use the measurements as a base to make any modifications you like: you can swap one citrus fruit for another or add some other fruit—it's delicious with apple, for example—let your imagination run wild!

Ingredients · Servings 6
  • 1 orange
  • 200 g of sugar
  • 3 eggs
  • 100g of extra virgin olive oil of a mild variety such as Hojiblanca or Arbequina
  • 1 natural yogurt ((125 g))
  • 250g of all-purpose flour
  • 10 g of baking powder
  • 1 pinch of salt
  • 1 tablespoon of powdered sugar
Method · 50 min
  1. Preheat the oven to 180ºC, top and bottom heat without fan.
  2. Grease your mold with a little butter or olive oil.
  3. Wash the orange, dry it well and grate its zest. Then peel it, removing all the white pith, which is bitter, and dice it into very small pieces.
  4. Put the sugar, eggs and chopped orange in a bowl and beat with a whisk at maximum speed for 5 minutes.
  5. While continuing to beat, add the oil and yogurt little by little at a slightly lower speed.
  6. Sift the flour and add it to the mixture along with the yeast, salt, and orange zest. Mix until you have a well-combined dough.
  7. Pour the batter into the pan. Tap the pan a few times by lifting it about a centimeter off the counter and letting it fall. This will remove any air bubbles that may be trapped in the batter.
  8. Bake for 35 to 40 minutes, until a skewer inserted into the center comes out clean.
  9. Remove your mold to a wire rack. Unmold it after a few minutes and dust with powdered sugar using a sieve as soon as it has cooled slightly.
