Easy yogurt and orange cake
This easy yogurt and orange cake is, above all, very easy. Plus, you can use the measurements as a base to make any modifications you like: you can swap one citrus fruit for another or add some other fruit—it's delicious with apple, for example—let your imagination run wild!

- 1 orange
- 200 g of sugar
- 3 eggs
- 100g of extra virgin olive oil of a mild variety such as Hojiblanca or Arbequina
- 1 natural yogurt ((125 g))
- 250g of all-purpose flour
- 10 g of baking powder
- 1 pinch of salt
- 1 tablespoon of powdered sugar
Method · 50 min
- Preheat the oven to 180ºC, top and bottom heat without fan.
- Grease your mold with a little butter or olive oil.
- Wash the orange, dry it well and grate its zest. Then peel it, removing all the white pith, which is bitter, and dice it into very small pieces.
- Put the sugar, eggs and chopped orange in a bowl and beat with a whisk at maximum speed for 5 minutes.
- While continuing to beat, add the oil and yogurt little by little at a slightly lower speed.
- Sift the flour and add it to the mixture along with the yeast, salt, and orange zest. Mix until you have a well-combined dough.
- Pour the batter into the pan. Tap the pan a few times by lifting it about a centimeter off the counter and letting it fall. This will remove any air bubbles that may be trapped in the batter.
- Bake for 35 to 40 minutes, until a skewer inserted into the center comes out clean.
- Remove your mold to a wire rack. Unmold it after a few minutes and dust with powdered sugar using a sieve as soon as it has cooled slightly.
