Homemade dulce de leche for non-purists

Today's recipe isn't really a recipe, it's more of a quick fix, but in my opinion, it's fantastic: this homemade dulce de leche for non-purists.

You will need

1 Olla express

Ingredients

1 can of condensed milk (740g)

Preparation

Remove the paper wrapping from the can of condensed milk —some brands don't even have it anymore— as well as the plastic lid.

Put water in a pressure cooker, place the can inside, and cover it completely. The water level should not be below the top of the can; if necessary, tilt the can. Cover the pressure cooker and place it on the stove.

When the valve is up and steam is coming out, lower the heat to medium and maintain for 15 minutes.

After those 15 minutes, turn off the heat, let the steam release naturally, and wait a few hours until it cools down. I like to take it out after about 3 or 4 hours. Once that time has passed, open the pot and enjoy!

Tips

Dulce de leche can be stored for a long time if kept properly. Store it in an airtight container and keep it at a temperature between 4°C and 8°C in the refrigerator. It can be kept there for six months, although in my house it doesn't last nearly that long!

The color depends on the cooking time. I like the one you see in the photo, and I achieve that with the time and resting hours I mention in the recipe, but the truth is, it never turns out exactly the same.
