Red fruit charlotte with vanilla cream and madeleines
Materials
- 250 g of whipping cream (30% fat)
- 250 g of mascarpone
- 80g of icing sugar
- 1 teaspoon of vanilla extract
- Approximately 12 ladyfinger biscuits.
- 4 tablespoons of milk approx.
- 11 madeleines (French shell-shaped muffins)
- 125g of raspberries
- 125g of blueberries
- 100g of raspberry or red fruit coulis approx.
- Fresh mint leaves
- Place the cream, mascarpone, mixing bowl, and whisk attachment in the freezer for 15 minutes. Line the mold with parchment paper or plastic wrap. Arrange the madeleines around the mold, with the domed side facing inwards.
- Soak the ladyfinger biscuits in the milk and place them side by side at the base of the mold.
- Beat the very cold cream and mascarpone with the icing sugar and vanilla extract until you get a firm mixture.
- Pour half of the cream over the ladyfinger biscuits placed in the mold.
- Cover with half of the raspberry coulis.
- Distribute half of the fruit, previously washed, on top.
- Cover with another layer of moistened ladyfinger biscuits.
- Add the rest of the cream and cover everything with cling film before leaving it to rest in the refrigerator for at least 6 hours.
- Take the charlotte out of the refrigerator, place it on the serving dish and pour the red fruit coulis over the center.
- Scatter the remaining washed fruit on top. Add a few fresh mint leaves.
- Sprinkle lightly with icing sugar before serving, if desired, and that's it!
