Roasted apricot ice cream with ninja creami
Can the skyr be substituted in this recipe?
- 450 g apricots
- 1 tablespoon of olive oil
- 1 sachet of vanilla sugar
- 1 teaspoon of rosemary (fresh or dried)
- 150 g natural skyr
- 1 tablespoon of agave syrup (or honey)
- Wash the apricots, halve them, and remove the pits. Add the olive oil, vanilla sugar, and rosemary. Mix well so the fruit is thoroughly coated.
- Place the apricots in the air fryer basket, on baking paper. Cook at 190°C for 10 minutes in Air Fry mode.
- Let the apricots cool and set some aside for later. Puree the rest with a food processor or blender until you have a smooth sauce.
- Pour the apricot sauce into the Ninja CREAMi bowl. Add the skyr and agave syrup.
- Gently mix the ingredients until you get a homogeneous mixture, without overbeating.
- Place the container in the freezer for at least 24 hours, keeping it horizontal and level.
- Place the container in the Ninja CREAMi and process the mixture by first selecting the “Scoop” mode and then “Ice Cream”.
- Check the texture of the ice cream. If it's grainy, crumbly, or not creamy enough, use the "Re-Spin" function.
- Add the roasted apricots you had set aside and select the “Mix-In” function to incorporate them into the ice cream.
- And that's it! You can finish it off, if you like, with a few more pieces of apricot on top.
Yes, you can substitute the skyr with Greek yogurt or another natural yogurt, according to your preferences.
