Traditional Cantonese Rice: The Best Recipe
What type of rice is ideal for preparing traditional Cantonese fried rice?

- 100g rice
- 100g diced ham
- 50g peas
- 1 carrot
- 2 eggs
- 1 tbsp olive oil
- a pinch of salt
- a pinch of pepper
- a drizzle of soy sauce (optional)
Method · 15 min
- Bring a pot of salted water to a boil to cook the rice.
- Peel and dice the carrot. Prepare an omelet with the two eggs, then dice it as well.
- In a deep-sided frying pan or wok, heat the oil and then sauté the ham for about 2 minutes. Add the carrot and cook, stirring constantly, until cooked but still crisp. Next, add the peas, then the omelet, and finally the cooked and drained rice. Stir-fry to prevent the rice from sticking to the pan. Add a splash of soy sauce and mix well.
Jasmine rice is ideal for Cantonese fried rice thanks to its texture and delicate aroma. You can also use basmati or long-grain rice.
How to get perfectly fried rice without it becoming too dry?
Use cold rice, ideally cooked the day before, to ensure the grains are well separated. Add a little oil, but don't overcrowd the pan, and stir-fry the rice over high heat, stirring regularly.
