Grilled pork ribs: the easy recipe
Why prepare the marinade the day before for pork ribs?
- 1.5 kg pork ribs cut into 2 pieces
- 2 tbsp Dijon mustard
- 8 tbsp hot ketchup
- 6 tablespoons of lime juice
- 2 tbsp honey
- 1 tbsp Worcestershire sauce
- freshly ground pepper
- cell
- Prepare the marinade the day before. Mix together the mustard, ketchup, honey, lemon juice, and Worcestershire sauce. Season with pepper and coat the ribs with this mixture. Keep refrigerated.
- Preheat the oven to 220°C (gas mark 7). Drain the ribs and reserve the marinade. Place a baking tray under the oven rack. Coat the ribs with the marinade and season with salt. Place them on the rack.
- After 10 minutes, turn the meat over and coat it with the marinade. Repeat every 10 minutes for about 45-50 minutes, until the meat is well caramelized. Serve immediately.
Letting the meat marinate overnight in the refrigerator is the secret to incredibly tender pork ribs. This extended resting time allows the fibers to soften under the influence of the lime's acidity, while the meat absorbs the sweet and tangy flavors of the honey, ketchup, and Worcestershire sauce.
How to successfully caramelize pork ribs in the oven without burning them?
The marinade contains sugar-rich ingredients that caramelize very quickly at 220 degrees Celsius (425 degrees Fahrenheit). To achieve a beautiful, shiny crust without any burnt taste, it's crucial to follow the successive basting technique described in the recipe. By turning and basting the meat every 10 minutes, you control the cooking and ensure even caramelization.
What is the purpose of the drip tray under the grill during cooking?
Installing a drip tray directly beneath your oven rack is essential. During high-temperature cooking, the fat from the pork ribs and excess marinade will melt and drip away. The drip tray collects these juices, preventing irreparable stains on the bottom of your oven and avoiding thick smoke in your kitchen. You can even add a little water to the bottom of the tray to make cleaning easier.
