Stewed pears without wine

Ingredients for 4 people

  • 8 stewing pears
  • 1 ltr water
  • 20 g hibiscus tea (in a filter or tea bag)
  • 2 tablespoons sugar
  • Juice and zest of half an orange
  • 1 cinnamon stick
  • 1 the cornstarch
  • A little cold water (to mix the cornstarch)

  1. Peel the pears and remove the core.
  2. Place the pears in a pan with the water. Add the hibiscus tea (in a filter or tea bag), the sugar, the orange juice, the orange zest, and the cinnamon stick.
  3. Stew the pears until tender, about 2.5 hours. Check occasionally to see if there is enough liquid in the pan.
  4. Gently prick a pear to check if it is soft. If necessary, let the pears stew a little longer.
  5. Remove the pears from the braising liquid. Serve them warm or cold, optionally with the sauce below.
  6. Pour the braising liquid through a sieve.
  7. Use half of the strained liquid for the sauce and return it to the pan.
  8. Stir the cornstarch with a little cold water into a smooth paste.
  9. Add the paste to the braising liquid while stirring. Bring to a boil and let the sauce thicken.
  10. Serve the sauce with the stewed pears.
