Stewed pears with port

Ingredients for 4 people

  • 8 stewing pears (Gieser Wildeman)
  • 350 ml rode port
  • 300 ml water
  • 2 tablespoons of honey
  • 1 cinnamon stick
  • 3 cloves
  • 2 tsp cornstarch
  • cinnamon ice cream (optional)
Method · 3 h 20 min
  1. Peel the stewing pears and leave the stems on. Remove the core if desired, or leave the pears whole.
  2. Put the pears in a pan with the red port, the water, the honey, the cinnamon stick, and the cloves.
  3. Let the pears simmer gently over low heat for about 3 hours. Check occasionally to see if there is enough liquid in the pan.
  4. Gently prick a pear to check if it is soft. If necessary, let the pears stew a little longer.
  5. Remove the pears from the pan and keep them warm. Remove the cinnamon stick and the cloves.
  6. Would you like to turn the stewed pears with port into a dessert? Remove the pears from the pan and cover briefly with aluminum foil to keep them warm. Use half of the cooking liquid for the sauce. Stir the cornstarch with a little cold water into a smooth paste. Add the paste to the warm cooking liquid while stirring. Bring to a boil while stirring and let the sauce thicken.
  7. Serve the stewed pears with the warm sauce and, optionally, a scoop of cinnamon ice cream.
