Stewed pears with port
Ingredients for 4 people
- 8 stewing pears (Gieser Wildeman)
- 350 ml rode port
- 300 ml water
- 2 tablespoons of honey
- 1 cinnamon stick
- 3 cloves
- 2 tsp cornstarch
- cinnamon ice cream (optional)
- Peel the stewing pears and leave the stems on. Remove the core if desired, or leave the pears whole.
- Put the pears in a pan with the red port, the water, the honey, the cinnamon stick, and the cloves.
- Let the pears simmer gently over low heat for about 3 hours. Check occasionally to see if there is enough liquid in the pan.
- Gently prick a pear to check if it is soft. If necessary, let the pears stew a little longer.
- Remove the pears from the pan and keep them warm. Remove the cinnamon stick and the cloves.
- Would you like to turn the stewed pears with port into a dessert? Remove the pears from the pan and cover briefly with aluminum foil to keep them warm. Use half of the cooking liquid for the sauce. Stir the cornstarch with a little cold water into a smooth paste. Add the paste to the warm cooking liquid while stirring. Bring to a boil while stirring and let the sauce thicken.
- Serve the stewed pears with the warm sauce and, optionally, a scoop of cinnamon ice cream.
