Potato Tortilla
Step 1
Peel the zucchini, potatoes, and garlic, slice the zucchini and potatoes into thin slices, and mince the garlic. Heat oil in a frying pan and fry the zucchini for 2–3 minutes, until soft. Transfer to a plate. Place the potato slices in the pan, sprinkle with garlic, and fry over medium heat for 5 minutes on each side.
Step 2
Place a layer of fried zucchini on top of the potatoes in the frying pan.
Step 3
Separate the thyme leaves. Beat the eggs with salt and pepper and pour over the vegetables. Sprinkle with thyme and cook over low heat for 10 minutes. Transfer the tortilla to a serving dish and let cool to room temperature. Then cut into portions.
