Chicken Back and Carcass Broth
With chicken broth in the house, no one will go hungry. It makes an excellent base for soups, from baby ones with star-shaped garnishes to a rich one with noodles, soy sauce, and sesame oil. It's easy to make a stew with it, or simply pour it into a mug for a warming, almost healing drink.

- Chicken back

- Without peeling, thoroughly wash the vegetables with a brush under cold water and chop coarsely. Chop the skeleton into smaller pieces.
- Place the chicken and vegetables in a saucepan, add 3–3.5 liters of cold water, and place over high heat.
- When the water boils, add salt, reduce heat to medium-low and skim off the foam.
- Add the peppercorns and herb stems. Simmer gently for at least 2 hours, or up to 4 hours if you want a stronger broth.
- After about 1 hour of cooking, remove the meat from the neck, back and ribs - use it for the soup, and return the bones back to the broth to continue cooking.
- Strain the finished broth through a cloth/several layers of gauze.
Chicken broth is a seemingly simple recipe. However, even such a simple recipe has its own subtleties and nuances. We asked chef Yuri Bashmakov to reveal the secrets of the perfect chicken broth.
Broth is the cornerstone. It's commonly believed that a cook's culinary skills can be judged by the broth they make. It might seem simple: just throw in a piece of meat and simmer for a couple of hours. But there are many pitfalls and tricks. Not everyone can achieve a clear, aromatic, and rich broth. But this skill is easy to master. For example, place the meat, vegetables, and herbs only in cold water, simmer for a couple of hours over very low heat and avoid boiling, carefully skim off any foam with a slotted spoon, and strain the finished broth through a sieve. The freshness of the meat is equally important, as is the quality of the recipe. We'll help you with the latter.
How do you make a clear broth and cook perfect chicken noodle soup? In chicken soup, the main flavor comes from the broth. You can add just noodles or vermicelli, or a variety of other ingredients, but if the broth turns out cloudy and flavorless, it will be difficult to straighten it out. If the broth is perfect, it's delicious even on its own, without any additives.
Chicken noodle soup is a childhood dish, a time when all you had to do was make sure you had the first course and not eat anything dry. Of course, you can't cook chicken noodle soup in 5 minutes, but you can make the broth ahead of time (we'll tell you how) and cook the noodles (we'll be honest about the tips), then combine everything and serve hot, garnished with fresh chopped herbs.
