Madrid Fusion Dreams #spainfoodtechnation raises the uncomfortable questions of gastronomy

A space for asking questions, rather than obtaining answers. If the main stage of El formato was born with the explicit intention of reserving a space not so much for individual showmanship as for collective reflection, in Dreams, the presentations are the exception.

What's happening with ultra-processed foods, and what is their real place in contemporary nutrition? Who ultimately decides what we eat? The nutritionist.

The program looks beyond the restaurant. The conversation is always presented in an open manner, without rigid hierarchies between stage and audience. In keeping with the guiding principle of this edition of Madrid Fusión—"The client takes the lead"—the attendee should not be a mere spectator either. At Dreams, the audience listens, but also participates, asks questions, and contributes nuances. Hence the particular significance of dialogues like the one they are participating in.

In previous editions, we've witnessed memorable moments, from Ferran Adrià igniting the debate on authorship in the age of artificial intelligence from the audience, to a roundtable discussion on the enduring relevance of the tasting menu that dominated the conversation for months. Because here, many discussions don't end when the session closes; they continue in the hallways, at other tables, or on social media. Because the purpose of this forum isn't so much to predict the future as it is to refine the questions we'll need to ask ourselves to confront it.
