Chip tower of plain chips, Manchego, Iberico ham, and hot honey

This tower of plain chips might sound over the top, but before you pass judgment: taste it first. We went the same way and can assure you: this is the first guest we invite to our party.

The chip tower (we recently wrote about this easy snack) has everything you dream of. The plain chips are coated in a delicious mixture of hot honey and melted butter(!).

As if that weren't enough, we garnish the whole thing generously with Iberico ham and fresh Manchego that has swept across a beautiful ski slope like a fresh snow shower.

Surprising dipping sauce

Are the toppings just on top of the tower, then? Don't panic; everything has been thought of, because anyone who reaches the bottom of the platter will find a surprising dipping sauce so that every chip gets exactly what it deserves and you can truly enjoy it down to the last crumb. So, are you convinced yet?

This is how you make a chip tower from plain chips

  • For the sauce, mix 1 tablespoon of aioli with 1 tablespoon of yogurt.
  • Melt the butter, hot honey, and a pinch of salt in a saucepan until sticky and clings to the back of a spoon. Then stir in a tablespoon of water and mix into a smooth emulsion.
  • Pour the sauce into a large dish or bowl and place the chips on top. Toss everything together well so that all the plain chips are coated in a thin layer of the emulsion. Work quickly, as the honey hardens fast.
  • Spread the aioli-yogurt mixture over the bottom of a deep plate.
  • Stack the chips on top of that to form the tallest possible tower.
  • Arrange the slices of Iberico ham around the tower.
  • Grate the Manchego over the tower of chips until everything is covered.
  • Serve directly from the dish!
