- 200 g rice flour
- 2 tablespoons ground cinnamon
- Large egg
- 35 g brown sugar
- 2 teaspoons Gluten-free yeast Gluten-free yeast
- 80 ml Sunflower oil
- Cinnamon for dusting

* In a bowl, place the egg together with the sugar, mixing the two ingredients well with the help of a simple fork, pour in the oil and cinnamon.
* After sifting the flour and yeast, add them too and start kneading with your hands until you obtain a well-compacted dough.
* Form small balls about the size of a walnut, place them on a baking tray lined with baking paper.
* Bake in a hot oven at 180°C for about 11 minutes, “mine is fan-assisted, so 11/12 minutes are enough otherwise they will dry out too much”. Adjust the baking time according to your oven, but don’t exceed 15 minutes.
* Once cooled, sprinkle with cinnamon to taste.
