Transition Into Autumn with a Mæst Food Long Table Dinner, Sept. 28th

Vancouver, BC | On Monday, September 28th, join Mæst Food’s Tomoko Tahara at Mount Pleasant winery, La Fabrique St-George, for a very special long table dinner. This dinner will be bringing some of our ongoing R&D to the table, including Botanical gastronomy through fermentation, preservation, koji making, local grains, and ways of working with seasonal BC ingredients.

For the menu, Chef Tahara will be focusing on the brief transition from late summer into early autumn, celebrating the arrival of squash and mushrooms, as the last fruits of summer move into preservation. Some elements have been fermented or preserved over time; others are prepared simply to capture the season as it is now.

The evening is served on one long communal table in the Dining Room at La Fabrique St-George winery at 7 East 7th Avenue. Come with friends or solo. The shared table creates an informal setting for experiencing the menu all together.

An autumn ikebana installation by Emily Matick will be created specifically for the dinner, to enhance the seasonal experience.

Long Table Tasting Menu

Snacks

Local grain koji cake with squash puree, fermented plum Baby eggplant tsukemono pickles Pumpkin bushi cracker, herbal dip.

Second course Caramelized onion consommé, fig leaf, slow roasted mushroom.

Main course Kuri squash Roasted with Canadian red cedar, squash reduction made from the squash trimmings and reduced until caramelized, pumpkin seed oil, pumpkin seed crumb., served with Sourdough Japanese milk bread, blistered kale.

Pre-dessert Rose hip granita, rose stem oil, fermented plum.

Dessert Blackened hazelnut marzipan, pear, lemon verbena oil.

There are two seatings available, at 5:45pm or 8:15pm. Tickets are $149 per person, including gratuity, and can be purchased online here.

Please note that we’re unable to accommodate dietary requests or substitutions. Natural wines are available to purchase separately at the table. Guest-initiated cancellations will receive a full refund. The original payment processing fee will be charged separately.
