Recipe for Brigadeiro (Brazilian chocolate fudge) with cassava, submitted by arcson nascimento
1. Cook the cassava in a pressure cooker with water only, until the cassava is very soft.
Ingredients · Servings 6
- 1 cup of cassava (yuca)
- 1 tablespoon of coconut oil
- 50 g of peanuts
- 1/2 cup of milk
- 3 tablespoons of cocoa powder (I like semi-sweet)

Method · 30 min
- Cook the cassava in a pressure cooker with water only, until the cassava is very soft.
- Remove some of the stringy bits with a fork.
- In a blender, combine the milk and gradually add the cassava, then blend the mixture on medium speed until it reaches a puree consistency.
- Remove the mixture from the blender and transfer it to a saucepan; I prefer to use a non-stick one.
- Turn the stove to medium heat, add the coconut oil and stir, then add the cocoa powder and continue stirring until smooth. Turn off the heat.
- The secret is in how you assemble the dessert!
- Take a small cup (I used one for serving brigadeiro with a spoon), put honey at the bottom, then the cassava brigadeiro, and top with honey and crushed peanuts.
- Let it rest in the refrigerator for a few minutes before consuming.
- 2. Remove some of the fibers with a fork.
