A delicious oven-baked lunch, ready in less than an hour

Tortillas are a great solution for days when you want to make something tasty but don't have much time to cook. Most often, we roll them up or use them for various wraps, but this time we can prepare them in a slightly more imaginative way.

Instead of rolling them, we shape them into pockets and fill them with a rich filling of ground meat, beans and corn. We place the filled pockets in a baking dish, sprinkle with grated cheese, and then simply bake them in the oven. During baking, the cheese melts, the tortillas become crispy, and when you cut into them, the rich and juicy meat filling inside is revealed.

Easy to prepare and doesn't take much time, these crispy tortilla pockets are a great choice for a quick lunch or dinner. Best of all, you can customize the filling and cheese to your liking - for example, you can replace the mozzarella with any other cheese that melts well.

Ingredients:

  • 500 g minced beef
  • 1 onion
  • 3 cloves of garlic
  • olive oil
  • 1 teaspoon oregano
  • 1/2 teaspoon paprika powder
  • 1/4 teaspoon cumin powder
  • 1 tablespoon tomato paste
  • 350 ml of tomato puree (passata)
  • 120 g canned red beans
  • 120 g canned sweet corn
  • salt and ground pepper
  • 6 small wheat tortillas
  • 300 g grated mozzarella (or cheddar or pizza cheese)

Preparation:

  • 1. Preheat the oven to 190 degrees Celsius. Peel the onion and garlic and chop them finely separately.
  • 2. Heat the olive oil in a pan and fry the onion for 5 minutes until nicely browned and slightly softened.
  • 3. Add the garlic, oregano, paprika powder and cumin. Stir-fry for another minute.
  • 4. Add the minced meat to the pan and fry for 5 minutes, stirring, until it starts to colour, then add the tomato puree and tomato puree, and finally the beans and corn. Cook for 10 minutes, then season with salt and pepper to taste and set aside. The sauce should be thicker, so if necessary, extend the cooking time a little longer if necessary.
  • 6. Meanwhile, lightly grease two round baking pans, about 24 centimeters in diameter. A pan that can be used for baking in the oven is also useful. Prepare a bowl or plate with cold water.
  • 7. Cut the tortillas in half and quickly soak each in water.
  • 8. Place two tablespoons of filling in the center of each tortilla half and sprinkle with a little cheese. Roll into a pocket, as shown in the photo below.
  • 9. Fill both baking sheets with the prepared pockets, then sprinkle the top with cheese. Bake in the preheated oven for 20 minutes, until the cheese melts and the tortillas are crispy.
  • 10. After baking, let the tortilla pockets cool slightly. Serve with sour cream or Greek yogurt, and a bowl of any salad goes well with it.
