PASTA WITH BACON AND PEAS

First, let's heat the vegetable broth, so that it's ready to add to cooking the pasta.

In a tall saucepan, brown the pancetta with a drizzle of oil, add the chopped onion and let it soften.

Add the peas, stir, and cook for a few moments; then add enough hot broth to cover them.

Season with salt and pepper, finally add the crusco pepper powder and cook over medium heat, with the lid on, for about 20 minutes.

Once the peas are tender, add the pasta and stir over high heat, without adding any liquid, for a few minutes.

At this point the peas will be quite soft, so let's mix them, just long enough to combine them with the pasta.

We then cook the pasta, adding the vegetable broth only when you notice that the liquid in the pan has almost completely absorbed.

Once cooked, it should be creamy, finally stir in the grated cheese.

Serve on serving plates with a drizzle of raw oil.
