Tropical cupcake recipe with meringue, submitted by Karina
1. Grease ramekins and sprinkle with demerara sugar.
Ingredients · Servings 5
- butter
- 2 large eggs
- 5 tablespoons of refined sugar
- 5 teaspoons of demerara sugar
- 1 1/2 tablespoons of cocoa powder
- 1 1/2 cups of flour
- 1 tablespoon of yeast
- 1/2 can of condensed milk
- 1 orange
- 1 strawberry
- 1 tangerine

- Grease ramekins and sprinkle with demerara sugar.
- Place the flour in a bowl.
- Add the cocoa powder and stir.
- Crack one egg and add only the yolk of the other egg to the bowl; the white will be placed in a mixing bowl.
- Mix what's in the bowl.
- Add the yeast.
- Add the condensed milk and stir.
- Squeeze the orange juice into the batter (using a sieve) and stir again.
- Fill the ramekin halfway with the batter (if you don't have a ramekin, you can use the pots from a fondue set, as I did).
- Leave in the oven for 20 minutes (or until the dough is golden brown, but it shouldn't be completely baked so it can bake along with the meringue).
- While the dough is baking, make the meringue.
- To do this, beat the egg white in the mixing bowl until it reaches the consistency of meringue, then add the tablespoons of sugar little by little while continuing to beat.
- After the time has passed, remove the dough and decorate the top with the meringue (you can decorate it however you like, or do it like mine, in the photo above).
- Leave it in the oven for about 5 minutes (or until the meringue is golden brown and the dough is cooked).
- After removing from the oven, garnish with the fruit, either in your own style or like mine in the photo.
