Recipe for Tri-Cheese Bread, submitted by Greice Augusta

1. In a saucepan, combine the liquid ingredients (water, oil, and milk) and bring to a boil.

Ingredients · Servings 100
  • 500 g of sweet cassava starch
  • 500 g of sour cassava starch
  • 250 ml of water
  • 250 ml of milk
  • 250 ml of oil
  • 1 tablespoon of salt
  • 1 tablespoon of monosodium glutamate
  • 4 eggs
  • 250g of crumbled semi-cured cheese
  • 250 g of crumbled fresh Minas cheese
  • 150 g of crumbled Parmesan cheese
Method · 30 min
  1. In a saucepan, combine the liquid ingredients (water, oil, and milk) and bring to a boil.
  2. Place the tapioca starch in a bowl and add the salt and monosodium glutamate, mix well.
  3. Bring the liquids to a boil and scald all the tapioca starch, stirring well to incorporate.
  4. Once the mixture has cooled, add the 4 eggs and stir.
  5. Finally, add all the crumbled cheeses and knead the dough until everything is well mixed.
  6. The dough will be smooth, a little sticky, but that's normal.
  7. Wash your hands and make balls of the desired size (I made cocktail-sized portions and it yielded 100 balls).
  8. If you wish to freeze them: after making the balls, place them on a baking sheet and put them in the freezer. Once frozen, place them in plastic bags.
  9. If you wish to bake them, simply place them in the pan and bake in a hot oven for approximately 20 minutes (or until golden brown).
