Ingredients · Servings 100
- 500 g of sweet cassava starch
- 500 g of sour cassava starch
- 250 ml of water
- 250 ml of milk
- 250 ml of oil
- 1 tablespoon of salt
- 1 tablespoon of monosodium glutamate
- 4 eggs
- 250g of crumbled semi-cured cheese
- 250 g of crumbled fresh Minas cheese
- 150 g of crumbled Parmesan cheese
Method · 30 min
- In a saucepan, combine the liquid ingredients (water, oil, and milk) and bring to a boil.
- Place the tapioca starch in a bowl and add the salt and monosodium glutamate, mix well.
- Bring the liquids to a boil and scald all the tapioca starch, stirring well to incorporate.
- Once the mixture has cooled, add the 4 eggs and stir.
- Finally, add all the crumbled cheeses and knead the dough until everything is well mixed.
- The dough will be smooth, a little sticky, but that's normal.
- Wash your hands and make balls of the desired size (I made cocktail-sized portions and it yielded 100 balls).
- If you wish to freeze them: after making the balls, place them on a baking sheet and put them in the freezer. Once frozen, place them in plastic bags.
- If you wish to bake them, simply place them in the pan and bake in a hot oven for approximately 20 minutes (or until golden brown).
- Enjoy!
