Simple pumpkin salad by Alex Sedláčková

This simple pumpkin salad is perfect for the Indian summer. The roasted pumpkin keeps it warm, but when combined with fresh ingredients like blueberries and arugula, it's not quite ready to throw in the towel. Get inspired by fashion influencer Alex Sedláčková's recipe and make this delicious dish for dinner.

  • arugula
  • blueberries

  • feta cheese
  • walnuts
  • olive oil

Method · 40 min
  1. Preheat the oven to 190 ° C. The amount of ingredients is variable, choose according to your taste.
  2. Remove the seeds from a piece of pumpkin and cut it into cubes. Peel it if you want. Place it in a baking dish, season with salt and pepper and drizzle with a little olive oil. Stir the pumpkin to coat it evenly and bake for 20-30 minutes.
  3. Meanwhile, prepare the other salad ingredients. Wash a handful of arugula and pat dry with a paper towel.
  4. When the pumpkin is baked, transfer it straight to a deep plate and let it cool slightly.
  5. Add arugula, some blueberries, dried cranberries, and chopped walnuts. Top the salad with crumbled feta cheese.
  6. Finally, drizzle the salad with honey and a little olive oil. Season with salt and pepper – but only symbolically, feta is salty enough on its own. Serve immediately.
