Meanwhile, dice the spicy provolone, chop the roasted cooked ham, and slice the pancetta. Add the seasoned rigatino to these.
Add everything to the spaghetti.
Beat the eggs with a pinch of salt and pepper and add this to the spaghetti, starting to mix it in.
Grate the Parmesan cheese and mix well again.
Ready to cook: pour a generous drizzle of oil into the pan and add your spaghetti.
Bring to a boil over medium-low heat and cook for a good ten minutes, then turn and cook for another 5 minutes.
It's already perfect like this, but you can go further by adding a nice burrata on top, seasoning it with pepper, a drizzle of oil and a few drops of balsamic vinegar.
